Observation: Rear Store/compactor: Food/debris littering ground. Unused equipment noted. Storage areas are to be kept clean and organized - areas along equipment and walls.
Corrective Action(s): Clean and organize exterior rear of property. All garbage/food debris is to be picked up and stored in covered, rodent proof containers. Remove all unused equipment.

Comments

- Temperature Control: No concerns noted. Monitoring required.
- Manual Dishwashing: Ensure all food contact surfaces and implements are being washed and disinfected after use or on a timely manner.. 4 Step Method. All implements are to be stored in a sanitary manner. Ensure all staff are properly trained. Corporate policies are to be followed.
-> Wiping cloth storage reviewed.
- Food Storage: Pallet/stock rotation discussed. Monitoring of expiration dates are required. Rear storage areas are to be kept clean and organized. Ensure regular cleaning of all "hard to reach" areas - behind/under equipment and shelving, etc.
- Chemical storage: Ok.
- Sanitary Facilities: Ok.
- Staff hygiene: Reviewed.
- Sanitation: Maintain a regular cleaning program within all departments. (ie: Dairy Dept - under pallets,along walls/around piping, etc) Increased sanitation is part of an effective rodent control program. Reduce all clutter and any unused items within all departments.
- Bulk Water dispensing/Coffee Grinder sanitation discussed..
- Garbage,Recycling, and Composting Storage: Refer to Violation Notes. Discussed. Compactor/Cardboard recycling areas are to be kept clean and organized at all times.
- Pest Control: An active pest control program is currently in place. Records reviewed. Refer to Sanitation Notes. All areas are to be kept clean and organized. Items are to be kept stored off of floors.

Meat Department:
- Plastic Knife Holders and Plastic Meat Scrapers are to be kept in good repair. Any deteriorating and/or damaged items are to be removed and replaced.
