Observation (CORRECTED DURING INSPECTION): High temperature dishwasher was unable to reach a final rinse temperature of 71C on the dish surface after 4 cycles.
Corrective Action(s): High temperature dishwasher must be able to maintain a final rinse of 71C on the dish surface to properly sanitize dishware. While dishwasher is being serviced, use the 3-compartment sink in the back for manual warewashing.

Observation (CORRECTED DURING INSPECTION): 3-compartment sink in back used for handwashing did not have any single use paper towels.
Corrective Action(s): Handwash stations must have hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Paper towels were placed by the handwash station at the time of inspection. Install a paper towel mount by the handwash station.

Observation (CORRECTED DURING INSPECTION): Carrots were stored in the floor in the walk-in cooler and spoon was stored directly in broth mix (handle was completely inside ingredients)
Corrective Action(s): Ensure foods are protected from potential contamination. Foods must be stored off the floor and scoops/spoons must be stored in a sanitary manner to prevent potential contamination of foods.

Observation: 1) High temperature dishwasher was unable to reach a final rinse temperature of 71C on the dish surface after 4 cycles.
2) Front bar cooler was at 6C to 7C.
3) Middle upright freezer is leaking water. Drain area needs to be cleaned.
Corrective Action(s): 1) Service or adjust dishwasher in order for it to provide a minimum final rinse of 71C on the dish surface. To allow for proper sanitizing of dishware.

Observation (CORRECTED DURING INSPECTION): Spray bottle of liquor was unlabelled in the walk-in cooler.
Corrective Action(s): All spray bottles must be labelled to identify their contents. This prevents accidental mixing or misuse of chemicals. Container was labelled at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Front sandwich cooler was at 3C.
-Freezer units ranged from -10C to -15C.
-Hot holding of soup was greater than 60C.
-Front display coolers were used to store non-potentially hazardous cream.
-Front handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach spray bottles labelled and tested at 200ppm.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
*Do not store cell phones on work surfaces - may result in potential cross contamination of work surfaces. After touching phones, staff must also properly wash their hands.
-Operator has valid FoodSafe Level 1 equivalent training.
