Observation (CORRECTED DURING INSPECTION): Vegetable slicer was found to have food debris (radishes) from previous use.
Corrective Action(s): Ensure all equipment is properly cleaned and sanitized after each use. Items with dried food debris may require additional soaking prior to washing and sanitizing. Slicer was soaked at the time of inspection to loosen debris.

Comments

-Sushi line cooler was at 3C. Cooler unit was less than 4C prior to being used for food storage.
-Undercounter cooler was at 4C.
-Upright cooler (kitchen) was at 4C.
-Front upright cooler was at 4C.
-Chest freezers were both less than -18C.
-Hot holding of rice was greater than 60C.
-Miso soup cooked on induction heater to greater than 74C prior to hot holding.
-Sushi rice pH was at 4.0
-Cooked chicken and beef made the previous night properly cooled and was at 4C.
-Tempura is ordered frozen from a third party and is reheated in the microwave.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail tested at 200ppm and properly labelled.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered. Raw meats stored below ready-to-eat foods.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
-Operator had valid FoodSafe Level 1 (July 7 2023).
