Observation: Salad bar cold holding of food continues to be an issue. Inserts still placed on top of ice instead of immersing inserts within a bed of ice. Checked chicken pieces and were observed around 10 C. Product volumes intended for short hold times, but not consistent. Ice machine virtually empty.
Corrective Action(s): A system by which cold potentially hazardous food can maintain temperatures below 4 C must be implemented at this facility. This will be reviewed at follow up inspection date noted on report.

**Discussed sanitizer spray bottle use and labelling. Agreed to discontinue the use of bleach sanitizer spray bottle (to be discarded) and move completely to Quats surface sanitizing.
**Discussed clean up of the handsink faucet. To be done.
Cooling units less than 4 C (aside from salad bar).
Hot holding above 60 C.
Freezers well below -18 C.
Dishwasher above 71 C at plate.
Sanitizing with Quats measured 200+ ppm at source and in sani-buckets.

General cleanliness is good.
