Observation (CORRECTED DURING INSPECTION): Hot Holding unit found to be at temperatures less than 60 degrees Celsius - 55 degrees observed and pizza, chicken and kebabs found to be at temperatures of 55 degrees Celsius
CORRECTED DURING INSPECTION - food items measured to be at 62 degrees Celsius.

Adjust thermometer inside the unit so that it faces employees and not customers

- Remove rodent droppings from area. Clean and sanitize with 200ppm QUAT sanitizer
- All items need to be moved on to shelves
- Remove Milk crates as rodents are climbing up these items and leaving droppings in crates
- Three compartment sink and handsink must be accessible and not blocked by various items
- Floor requires cleaning both in front and in back under equipment
- Remove all items not needed for daily use.
