Comments

Prep cooler is measured at 4C and produce cooler measured at 1.9C.
Discussed with staff not to store anything hot (>20C) in the cooler as it will elevate cooler temperature as well as encourage improper cooling of food.
Cleaning in the back and front bar area has been done.
Nothing stored inside bar handwashing station. Corner space in the bar counter has been allocated to place tray for dirty cups.
Exhaust hood has been professionally serviced. Please remember to wash the removable exhaust filters regularly.
Bleach sanitizer measured at 100ppm.
A plastic crate is placed underneath the basket for bread. Operator will be buying food grade plastic bags for the bread to cover the food properly.
Operator will be place cooked meat patties on the metal shelf above the stove which can keep food >70C, then reheat to order. Any leftover from hot holding the patties shall be cooled down on metal shallow trays in single layer for no more than 2 hours at room temperature, then placed in cooler.
