301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Both cooling wands were observed stored on the floor near the chest freezer.
2. Stand mixer bowl was previously used last night and it was not maintained in a clean condition.
Corrective Action(s): 1. Both cooling wands were re-located to the 2-compartment sink to be manually washed, rinsed, sanitized, and air dried. Ensure to store the cleaned and sanitized cooling wands on a clean shelving unit or designated storage area at least 6 inches off the floor and away from sources of potential contamination; Correct today and prior to reuse.

2. Clean and sanitize the standing mixer bowl; Correct today and prior to reuse. Ensure stand mixer bowl is cleaned, sanitized, and air dried at least every 4 hours between use and after final use each day.

Observation: Rodent droppings were observed in the following areas of the food premises:
-Floor corner near the upright freezer
-Floor next to the chest freezer
-Lower shelving unit (where the table fan is stored) across from the staff washroom
-Floor behind the stove-top equipment.
Corrective Action(s): Clean and sanitize the above-noted areas to remove the rodent droppings; Correct today. Ensure to regularly monitor for rodent droppings and other signs of pest activity and regularly clean and sanitize all affected areas. Continue with your pest control program. If any entry points are observed, ensure to seal them immediately. Continue keeping the front and backdoors shut between use. Ensure that all food and food contact surfaces in storage areas are protected from any potential contamination.

Observation (CORRECTED DURING INSPECTION): A cardboard liner with grease accumulation was observed covering the stand mixer bowl.
Corrective Action(s): Operator removed the cardboard liner and replaced it was a clean storage lid. Do not use cardboard liners since they are not made of impermeable to moisture, durable, or easy to clean materials.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Walk-in-cooler was above 4 degrees C (measured between 5.2 to 6 degrees C).

2. A bucket containing water was stored below the 2-compartment sink. Plumbing fixture below the 2-compartment sink had a grocery bag wrapped around it. Operator informed it had been leaking and they are trying to contact a plumber to repair the leak.
Corrective Action(s): 1. Adjust, repair, or re-service the walk-in-cooler so that it maintains temperatures at or below 4 degrees C; Correct today.

2. Ensure the appropriate repairs are made to prevent the leak at the 2-compartment sink; Correct as soon as possible within 2 weeks. Contact the Environmental Health Officer for a follow up inspection once the appropriate repairs have been made.

Comments

All three handsinks were supplied with liquid soap, hot and cold running water, and sigle-use paper towels.
Staff were washing their hands between different activities.
Pizza prep cooler (lower and upper component) were at or below 4 degrees C.
Display sweets cooler was at or below 4 degrees C.
Both upright freezers and chest freezer were at or below -18 degrees C.
Hot-held pizza was at or above 60 degrees C.
Two cooling wands were available.
2-compartment sink was supplied with hot and cold running water and it was equipped with two sink plugs.
100 ppm chlorine sanitizer was available inside two sanitizer pails with wiping cloths.
Food was covered in storage areas.
Pest control program was in place on a monthly basis according to the Operator. Pest control reports were not available on-site. Provide or show a copy of your pest control report to the Environmental Health Officer during the follow up inspection.
Dry goods were covered in storage areas.
Observed limited amount of reusable plates and cups on-site are for staff use only according to the Operator.
Only single-service utensils are used for customers.
