203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Large pot of tomato sauce cooling in walk in cooler covered with tin foil and a folded back section to allow heat to escape. Noted at 41. 5 C and made in the morning.
Corrective Action(s): Ensure all food requiring cooling is rapidly cooled:
>60 C to 20 C in 2 hours
20 C to 4 C in 4 hours
6 hours max or discard food.

Rapid cooling practices include:
1.Ice bath
2.Small shallow pans
3.Ice/ cooling wand

If sauce is going to be used during the same day it is made it is recommended to maintain food at or above 60 C to prevent pathogen grow.

Observation (CORRECTED DURING INSPECTION): 1. both dirty meat slicers covered with white linen - food debris still on blades and guards
2. Dirty white linens covering clean plates on plate cart in kitchen and covering clean coffee mugs in bar
Corrective Action(s): 1. Ensure all equipment is properly cleaned and sanitized after use to prevent pathogen growth and build up of food debris. DO NOT cover equipment until it has been properly cleaned and sanitized. After equipment is clean then cover with clean linen.
2. All linens used to cover food or clean dishes/ equipment must be CLEAN to prevent contamination.

Observation (CORRECTED DURING INSPECTION): Comet - cleaner with bleach chemical products used to clean and sanitize all surfaces. This product requires rinsing after use.
Corrective Action(s): Ensure all food contact surfaces are cleaned and sanitized by a sanitizer product that does not require a rinsing step.
Bleach & water (1 tsp bleach per 1 L of water = 100 ppm chlorine) solution is effective option. Once applied and spread evenly it can be left to air dry.
Until new products can be found follow manufacturers instructions.
