Observation (CORRECTED DURING INSPECTION): 3 cartons of raw eggs (3 X 30eggs) stored at room temperature for more than 1 day. All discarded at this time.
Corrective Action(s): Raw eggs must be stored in cooler at 4'C or below AT ALL TIMES. Any raw eggs placed above 4'C for more than 2 hours must be discarded.

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; freezers operating at/below -18'C; Hot-holding units operating above 60'C.
- Temperature monitoring system in place.
- Ice machine satisfactory. Scoop stored in proper manner.
- High temperature dishwasher achieved 71.2'C at the plate level after final rinse.
- 200ppm chlorine solution available in spray bottles.
- Dry storage shelves maintained in sanitary condition. Good.
- Foods obtained from approved sources. Receipts kept on site.
- Professional pest control company contracted. Traps in place.
