Observation (CORRECTED DURING INSPECTION): Cooked meat had been left out in a tall container at room temperature for orders. It was cooked at 12pm and the insepction took place at 1:30pm.
Corrective Action(s): Cool meat in a shallow container to allow for quicker cooling. Also, do not leave a large amount of cooked meat out at room temperature

Comments

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
Temperature records were available.
Reviewed cooling practices for the pho broth. Staff use an ice bath and a cooling wand to cool broth that is cooked in advance.
The dishwasher reached 75 C at the plate level. Check daily.
The ice machine was clean.
Bleach sanitizer solution was measured at 100 ppm.
No evidence of pests.
General sanitation was satisfactory.
