Observation (CORRECTED DURING INSPECTION): Teriyaki, BBQ, ranch sauce bottle observed to be stored in a portable cooler that was turned off. Air ambient temperature of cooler measured at 13C.
Corrective Action(s): Discard the aformentioned sauces. All sauces must be stored in a cooling unit able to hold an air ambient temperature of 4C or lower.

Built-up of food debris observed on shelving racks in the preparation cooler. Exterior food bins in the preparation cooler observed to have dried up sauce outside that can pose contmination.
Corrective Action(s): Clean and sanitize the aforementioend areas. Review facility's Sanitation Plan and ensure thorough cleaning and sanitizing are conducted daily throughout the premises. Corrected by: December 9, 2022.

Handwashing sink at the front preparation area well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine spray bottle at 100ppm in the front preparation area. 3-compartment sink sanitizing at 100 ppm chlorine solution.
Prep cooler and walk-in cooler measured at 4C. Stand-up freezer measured at -20C.
