Observation (CORRECTED DURING INSPECTION): Muffin batter was found to have mould growing in it.
Corrective Action(s): Do not use mouldy food. Check stock regularly and discard items as needed. Muffin batter was discarded at the time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Staff was unable to prepare 100ppm chlorine sanitizer in the 3-compartment sink. Solution was less than 10ppm (detection limit of test strips). Cleaning and sanitizing is carried out at approximately 3pm each day.
Corrective Action(s): A minimum of 100ppm chlorine is required in the 3-compartment sink for proper sanitizing of equipment of utensils. Staff was instructed on how to prepare 100ppm chlorine sanitizer at the time of inspection and prepared 100ppm chlorine.

Observation: Operator is reusing corrugated plastic cake trays. Trays are washed and reused.
Corrective Action(s): As discussed during the initial inspection, corrugated plastic board cannot be properly cleaned and sanitized after each use. Plastic board must be discarded after each use. Once existing stock of corrugated plastic board is used is, operator is to change over to single use board. Used corrugated plastic board was discarded at the time of inspection.

Comments

-Front display coolers were both at 4C.
-Upright cooler was at 4C.
-Upright glass door cooler was at 4C.
-Chest freezer was at -26C.
-Cake freezer in the customer area was at -17C.
-Hot holding ranged from 50C to 60C. Staff have a record book documenting when items are discarded (items are discarded every 2 hours).
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottle was greater than 200ppm and was diluted at the time of inspection. Bottle was properly labelled. Ensure containers are relabelled as needed.
-Staff member on-site had FoodSafe training (Exp Jan 2 2021).
-Foods properly stored off the ground and protected from potential contamination.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Staff washroom clean and well maintained.
