Overall sanitation is satisfactory Hand washing station stocked with liquid soap and paper towel Hot and cold running water available at all sinks Three compartment sink used for manual dishwashing; QUAT sanitizer dispenser in good working condition, measured QUAT at 200 ppm All coolers at 4 C or lower; all freezers at -18 C or lower; hot holding unit able to hold 60 C or higher; due to quality issues, operator had hot holding unit at 47-55 C for 1.5 hr, past 1.5 hr all pizza will be discarded.
