-Follow-up inspection to March 30, 2022. -Operator has cleaned and sanitized remaining areas affected with rodent droppings. Operator has sealed potential pest entry points with steel wool and has covered potential openings. Additional sticky board monitoring stations have been added. Operator still observing minor pest activity. Continue to monitor for pest activity and contact pest control services as needed. -Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing). Operator continues to test chemical dishwasher to verify chlorine concentration on a daily basis. -Time tracking paper has been placed by the hot holding unit. Chicken which has not been sold is discarded after storage between 4C to 60C for 2 hours. -Please contact the inspector if you have any questions or concerns. -Signature not required due to COVID-19.
