Observation (CORRECTED DURING INSPECTION): Undercounter cooler is measured to be 7.9oC (air temperature). Food temperatures are measured to be 6.4oC (tofu pudding); 7.0oC (whipping cream); and 7.5oC (cream cheese). No temperature log is maintained. Digital thermometer in the cooler is out of battery.
Corrective Action(s): Potentially hazardous foods must be maintained at 4oC or less at all times. Do not use cooler until it is fixed/adjusted and temperature is maintained at 4oC or less.
