Food temperatures are measured to be 6.4oC (tofu pudding); 7.0oC (whipping cream); and 7.5oC (cream cheese). No temperature log is maintained. Digital thermometer in the cooler is out of battery. More attention is required in downstairs (floor). Ice machine is in good condition. Discussed manual dishwashing procedures with staff. Quats sanitizer is used to sanitize dishware.
