Observation: Mouse droppings observed in the corner of the cook line. Pest control is onsite twice per month, reports reviewed during the inspection. Some flies noted as well.
Corrective Action(s): Clean the droppings with a bleach solution and continue following the recommendations of a professional pest control company.

Comments

-A follow up inspection will take place in approximately one month.
-Note: Renovations are planned. If the layout is going to change, then new floor plans are required prior to starting the renovations.

All coolers were < 4 C.
The walk in freezer was at -17 C.
Hot held foods were > 60 C.
The dishwasher reached 77 C at the plate level (minimum 71 C). Ensure that the temperature at the manifold is checked (minimum 180 F).
Hand washing sinks were supplied with hot and cold water, soap and paper towels.
Ice machine was clean and the scoop was stored in a holder.
Food is stored off the ground.
General sanitation was satisfactory.
