Observation (CORRECTED DURING INSPECTION): Chlorine Sanitizer at front station measured at 0ppm at time of inspection.
Corrective Action: Operator made new bucket of sanitizer that measured at 200ppm at time of inspection.
Chlorine sanitizer must measure between 100-200ppm to properly sanitize food contact surfaces and prevent pathogen growth.

Observation (CORRECTED DURING INSPECTION): Raw eggs stored above ready to eat items in wak-in cooler.
Corrective Action: Eggs were moved to lower shelf, below ready to eat items at time of inspection by operator. Eggs must be stored below ready to eat items to protect food items from contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Dead mouse observed on sticky pad at back door. Mouse droppings observed at back entrance, underneath prep sink and 3 compartment sink and behind chest freezer.
Corrective Action: Wash and Sanitize all areas that have rodent droppings with bleach sanitizer.
Pest Controls Company comes once a month to monitor and seal holes and place traps. Continue to monitor for pest activity throughout facility and wash / sanitize areas where rodent droppings are observed.

Observation: Back entrance screen door has missing section of weather stripping and hole near the back entrance was observed.
Corrective Action: Replace the weather stripping on back screen door and fill hole in the wall by back entrance. to prevent the entrance of pests.
Look throughout the facility for holes / cracks and fill them prevent entrance of rodents.

Observation: Visible debris and grease build-up underneath fry area and on hood vents.
Corrective Action: Wash and sanitize area and hood vents to maintain sanitary conditions of facility and to prevent further pest infestation by providing food.

Observations:

Handsinks and washrooms facilities had hot / cold running water, liquid soap and single use paper towels.
High temperature dishwasher measured at 75C at plate level after the final rinse.
Chlorine sanitizer bottled (labelled) measured at 200ppm.
All coolers measured at 4C or below and thermometers available
Chest freezers measured at -18C
Stand up freezer was being repaired at time of inspection and was empty.
All broom buckets were previously stored freezer and were thawing in walkin cooler. Proper cooling procedures were reviewed with operator.
Ice machine was sanitary and scoop stored separately.
All food items and equipment were stored off the ground
Food items are labelled and covered.
Sprouts are kept on ice and changed every 2 hours.
Food permit is posted and Food safe Training is valid

All foodsafe certificates / training done before July 2013 are expiring July 29, 2018 and must be renewed.
