Observation (CORRECTED DURING INSPECTION): 1. Four totes (10L) of broth stored in walk-in cooler were measured with a internal food temperature of approximately 8.5-8.8C. Staff stated the broth was cooked yesterday night at 8:30 pm, 18 hours ago.
2. Cooked pork chop was store under abmient room temperature in the kitchen. Internal food temperature measured at 22C. Staff stated it was cooked an hour and 40 minutes ago.
Corrective Action(s): Instructed staff to discarded all four totes of broth. Cooked pork was moved to a functional cooler. All potentially hazardous food must be cooled from 60C to 20C in 2 hours and 20C to 4C in 4 hours.

Observation (CORRECTED DURING INSPECTION): One basket of bean sprouts was stored under ambient room temperature with a internal temperature of 10C.
Corrective Action(s): Bean sprouts must be stored on ice bath or inside the cooler. Do not store bean sprouts under ambient room temperature. Operator added ice to the bean sprouts.
