Observation (CORRECTED DURING INSPECTION): 1. Bleach sanitizing spray bottle measured at less than 50 ppm. Staff stated she was not in charge of changing the sanitizer and did not know how to.
2. High temperature dishwasher was used immediately after turned on without waiting for the warm up period. This will result sanitizing cycle with a lower than required temperature.
Corrective Action(s): 1. Educated the staff on making 100-200 ppm bleach sanitizer. Operator must properly train all staff on how to make food surface sanitizer. Clean and sanitize all food contact surfaces on site.
2. After staff turns on the dishwasher. a warming up period must be waited before using the dishwashing. A sign should be showing up on the dishwasher when it is ready.

Observation: The only staff on duty did not have a valid FOODSAFE Level 1 certificate or equivalent.
Corrective Action(s): At least one staff working on site must have a valid FOODSAFE Level 1 certificate or equivalent during operator's absence. Send one staff to take the FOODSAFE Level 1 or reshcedule the shifts to cover this. Correct by: May 29, 2022.

- Food products stored off the ground.
- General sanitation satisfactory.
- No pest activities observed a the time.
