Comments

- Operators have health approval to prepare adobo sauce and carne enchilada at YVR Prep. Adobo sauce is used as an ingredient in the preparation of fresh chorizo sausage (raw, requires cooking) which is made for Dona Elo by Columbus Meat Market 1310 Nanaimo St. Vancouver. The fresh chorizo is also packaged, labelled and frozen at Columbus Meat Market. Dona Elo distributes frozen product from direct this location to retail location where it is sold. This is a minor change from initial inspection. No concerns at this time.
- Fresh chorizo is sold at retail locations within the lower mainland. At this time, Operators have not begun producing carne enchilada.
- Contract/agreement in place with YVR Prep for hourly use. Time is booked as needed when orders are received. Typically, the kitchen is used twice monthly.
- Station #1 used in main kitchen. Station maintained in sanitary condition.
- Equipment and dry ingredient storage was acceptable. Area maintained in a clean, organized condition with food items protected from contamination.
- No product stored in walk-in cooler at time of the inspection. Refrigerated storage space is available as needed when adobo sauce is processed and prior to transport to Columbus Meat Market.
- No product stored in freezer at time of the inspection as frozen product is being distributed/delivered direct from Columbus Meat Market.

Premises:
- Handsink accessible to station supplied with hot and cold running water, liquid soap and paper towel
- Walk-in cooler 4C
- Walk-in freezer -17C
- High temperature dishwasher operational. Final rinse measured 77C at dish surface.
- Quats sanitizer present. Concentration measured 200ppm.
