Coolers are all at 4 C or colder. Replace thermometers if broken. Hot holding/cooking stock - >74 C - good. Cooling - using a cold water bath in prep sink to quick cool hot foods. Keep temperature records for all fridges and food items (sous vide, cooked food, etc.). Hand washing station has liquid soap and paper towels. Quats are at 200-300ppm. Dishwasher has a chlorine final sanitizing rinse. Premises is well-organized.
