Observation: Plastic sheet coating is still on the bottom of the two prep tables in back area. This plastic is peeling, dirty, and not able to be cleaned.
Corrective Action(s): Remove the plastic sheet coating from the two bottom shelves and clean shelves. Correct today.

-leaking front prep cooler has been fixed
-handsinks fully equipped
-food safety certificates on site
-ice water on cook line used to store in use utensils changed about every 2 hours
-quats sanitizer in spray bottles at 200ppm
-dishwasher sanitizing at 100ppm
-hot holding of rice and chicken at >60C
-coolers at 4C or less
-freezers at -18C or less

*temperature checks were not done the last week that the manager was off - ensure checks are done and recorded twice daily, regardless of who is on shift
*changes to be made to temperature/sanitizer log sheet: ensure AM and PM columns are being used for each day, minimum hot holding temps of alto sham drawers is 60C/140F for food safety
