Observation: -No changes to operation or layout of premises except that the old owners mad ea hole in the front coutner and filled it in with stryofoam. All survaces are to be smooth, nonabsorbent, durable and washable. Operator to repair/ replace counter within 1 month.

Comments

-Inspection conducted to grant health approval for owner change.
-The premises is permitted to process (ie. cut) various types of seafood and nonsushi grade fish.
-There is to be no processing or repackaging of any other foods.
-Bleach available on site. Demonstrated to operator how to make 100 ppm chlorine sanitizer and do 4 step manual warewashing.
-Hand wash stations had soap, paper towel, hot and cold running water.
-Ice machine appeared clean with scoop stored outside of ice. Ice is used to store fish on ice, not for consumption.
-All coolers 4 deg. C or less (walk-in, display case...etc) and all freezers -18 deg. C or less (walk in, refill reach in...etc)
-Premises is not permitted to do any cooking/ hot holding/ live tank
-General sanitation satisfactory. No obvious sign of pest infestation. Back door was closed at time of inspection
-Ensure all foods are from approved sources and labelled as per CFIA requirements. Keep all documentation on site.
-Light covers in place
-Door to staff washroom was self closing
-Drain plugs x 2 available at warewashing sinks. Chlorine test strips available (100 ppm)

-Operator must obtain obtain health approval before making any changes to the food premises (structure or operational).
