Observation (CORRECTED DURING INSPECTION): The soap dispenser was observed to be empty at the dishwasher. Once bottle replaced and unit primed soap was dispensed into the wash cycle.
Corrective Action(s): Operator states they wash all the utensils in the 3 compartment sink before placing them in the dishwasher to ensure all the grease has been sufficiently been removed. This practice was observed at time of inspection.
