Observation (CORRECTED DURING INSPECTION): Noted dirty knives in the knife containers along with clean knives.
-> Do not put dirty knives back in the container since other clean knives can be recontaminated. Dirty knives must be stored separately until washed and sanitized.
-> All knives in the container were cleaned during inspection.

General:
-Handsink fully equipped with liquid soap & paper towel
-Bleachwater @ 100 ppm in cloth container and spray bottles
-Prep cooler @ 4 deg. C, inserts @ 5 deg. C ~ 6 deg. C
-Green onion shredder machine fully cleaned. Good.
-Standup freezer @ -18 deg. C
-No signs of pest activity was noted
-Standup cooler @ 4 deg. C
-Dishwasher (low temp) @ 50 ppm CL detected
-Walk-in cooler @ 4 deg. C
-General sanitation: satisfactory.
Note:
-> Noted a stock pot of broth on the floor. The stock pot was temporarily removed from the stock pot stove to boil another pot of sauce. The temperature of the broth was @ 66 deg. C.
-> 1) Always maintain hot food (broth) @ >= 60 deg. C
-> 2) Put a lid on top when any pot is temporarily removed from the stove.
