Please note the following:
Always reheat food to 74 degrees C before placing it in the hot holding unit. All parts of the food (including the meats and vegetables) must reach 74 degrees C.
All exposed wood must be finished so that the final product is non-absorbent, smooth and easy to clean. Exposed wood absorbs moisture and becomes moldy.
Do not use cardboard on the floor.
Maintain sanitation levels to help prevent a pest (e.g. mice) infestation.

- Temperature of coolers and freezers were adequate.
- Liquid soap and paper towels were available for hand washing.
