Observation (CORRECTED DURING INSPECTION): * Again cooked pasta was being stored in buckets in ice in 2-compartment sink area near grill and it had been there for 3 hours or more and had to be discarded as it was in danger zone.
Corrective Action(s): * Cooked pasta must be stored in mechanically refrigerated cooler at 4'C/40'F or colder or in hot-holding unit at 60'C/140'F or hotter

Observation (CORRECTED DURING INSPECTION): * Wiping rags were found on counters and also staff were using to dry hands and hanging these on their uniforms, etc. This is considered unsanitary practise-- staff to wash hands and dry on single use towels(paper towels) and wiping rags are to be kept in sanitary condition (ie. in sanitizer between use)
Corrective Action(s): * Ensure wiping rags kept in sanitizer between use; staff not to hang rags on their uniforms to wipe hands as this is unsanitary practise-- frequent and proper hand washing to be done instead

Observation: * Some prepared food in walk-in cooler directly on floor area and was uncovered and not protected from contamination; staff covered food and reminded that ALL food must be covered/protected and OFF floors; Also, personal items such as glasses or staff drinks not to be stored in food prep areas as this can lead to cross contamination
Corrective Action(s): * Ensure ALL food covered and protected from contamination and stored OFF floors; ensure staff personal items stored away from food/food storage areas and that staff not to drink in food prep areas either

Observation: * Freezer beside walk-in cooler is no longer suitable or in proper working order-- rust and taped together and not closing properly. It must be replaced and this was discussed with owner/operator
