NOTE: back door was wedged open as workers were dumping out the garbage -ensure the door or screen door is closed tight when not actively shipping goods

Temperature Controls:
-1-door display 3 deg C
-2-door dispaly 4 deg C

-was not able to check hot held foods due to closing time -ensure >60 deg C

-< 2 hour holding time for the boiled eggs and ham on ice trays

Chemical Controls:
-Glasswasher >50ppm chlorine residual
-Main washer >50ppm chlorine residual

Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used

Daily tracking sheets maintained for fridges, hot holders and mechanical washer

General Sanitation
-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath
