Observation: Walk in cooler air temperature is at 5 C (far side food shelves) and 7 C (shelves near door). Inspection is in the mornign and your thermometer is 44F (at top).
Corrective Action(s): Move all potentially hazardous foods (eg. meat, seafood, dairy, cooked pasta, cooked rice, cooked vegetables, sauces with pH >4.6, etc.) so that they will be stored at 4 C or colder. Follow your written food safety plan and keep food safety plan on site. Quickly cool hot foods prior to storing in the walk in. Do not stack foods. Allow for good air flow.

Observation: There are still no paper towels at the hand washing sink in the staff washroom.
Corrective Action(s): Provide paper towels at the hand washing sink in the staff washroom immediately (this is a repeat request).
Note: Today both sinks in the back prep kitchen are being used for food preparation. A hand washing sink is required that is to be designated solely for hand washing (one of the two sinks must be for hand washing only and not food prep OR install a smaller hand washing sink - floor plans required).

Observation: Staff washroom has not been cleaned and is in disrepair (broken top of toilet tank). Water is still accumulating on the glassware washer floor. Manager advises that there is a backflow preventer in the wall behind the hosebib.
Corrective Action(s): Clean staff washroom and clean up water/repair leaks in the glasswasher area.
