Observation (CORRECTED DURING INSPECTION): Hot broth for soup cooked and stored on shelf below warming unit. Item was to be placed into hot holding unit once current soup was used up. Discussed with owners. Soup is replaced in approximately one hour's time. CORRECTED DURING INSPECTION - soup placed on grill to be re-heated.

Corrective Action(s): Ensure all items intended to be added to hot holding unit go into hot holding unit at temperatures greater than 60 degrees Celsius. The hot holding unit is not intended to re-heat food items. Leave food items on grill or in oven at temperatures greater than or equal to 60 degrees Celsius prior to placement in hot holding unit.

Observation: Rodent droppings observed in the following places:
- Behind freezers in downstairs, basement storage area
- On floor in corner adjacent to blue hand sink
- On floor where large white tubs are stored (sauce tubs) and shelf above
- On shelves of shelving unit by back door

Corrective Action(s): Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Inspect facility for points of entry for pests. Seal any holes. Specifically check around these areas mentioned above as they have high activity compared to the remaining areas of restaurant.
Seek out services of an alternative pest control company as infestation remains even after past inspection from pest technician.

Observation: Clean and sanitize all areas with rodent droppings. Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Ensure thorough cleaning is occurring at night. All items need to be removed of floor six inches/15 cm to facilitate cleaning.

Pest Infestation ongoing: It is extremely important to clean and sanitize nightly. In order to remain open and in operation the facility must be able to demonstrate a high level of sanitation. Any failure to ensure high levels of sanitation or any contamination of food contact surfaces or food or food equipment will result in the immediate CLOSURE of the business. The facility will continue to be monitored by Fraser Health to ensure compliance and to ensure pest infestation is resolved.
