Observation (CORRECTED DURING INSPECTION): Congee made the previous night was at 6C.
Corrective Action(s): Potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. Congee can either be cooled rapidly in partially (half) filled containers or rapidly cooled in the under counter freezer.

Observation (CORRECTED DURING INSPECTION): Sauce was stored in an opened metal can (opened 2 days ago).
Corrective Action(s): Once canned foods are opened, the contents must be transferred to a food grade container to prevent potential contamination of foods. Sauce was transferred to a plastic container at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Frozen shrimp was thawing in standing water.
Corrective Action(s): Frozen potentially hazardous foods must be thawed under cold running water or in a cooler at 4C or less. Cold running water was turned on at the time of inspection.

Observation: Operator FOODSAFE Level 1 expired on May 1, 2023. No other staff on-site had their FOODSAFE Level 1 or equivalent training at the time of inspection.

-Upright coolers were at 3C/4C.
-Under counter freezer was at -15C.
-Hot holding was greater than 60C. Foods are reheated to greater than 74C prior to hot holding.
-Cleaning and sanitizing carried out in the 2-compartment sink. Bleach and sink plugs available.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pails labelled and tested at 100ppm to 200ppm.
-Rice scoop paddle water changed every 2 hours.
-Raw meats stored below ready-to-eat foods.
-General sanitation good at the time of inspection.
-Facility pest control services offered by the mall complex pest control operator.
-No signs of pests noted at the time of inspection.
