Routine inspection conducted and the following were noted at the time of inspection:
Closed and opened display case coolers were less than or equal to 4C.
Standup freezers and chest freezers at -18C.
No hot holding of food products.
Chlorine sanitizer available in back kitchen and concentration was at 100ppm.
3 compartment sink available.
Front and back hand washing stations satisfactory.
Deli meats, cheeses, jarred products, and fish products obtained from supplier. Majority of products and records kept at production facility.
Perogies, cabbage rolls, and borsch all made a production facility.
Vacuum machine on-site is only used for repackaging of open food products.
No pest activity noted.
