Observation (CORRECTED DURING INSPECTION): **Note: This is a repeated violation** Hot potentially hazardous food were noted stored in the oven like last routine inspection and similar to last time, the temperature of the oven is not turned on high enough to maintain the food at over 60.0C. The internal temperatures of 3 stainless steel containers of food were noted at 28.3C for beef, 31.4C for chicken and 35.1C for pork. Picture evidence collected for the food.
Corrective Action(s): The three containers of cooked meat were discarded during the inspection.
Note: This is a repeated violation and due to the nature of this violation if this happens again escalated enforcement actions may occur (e.g. Order, ticket, etc.).
It is especially important to keep cooked protein hot at 60.0C or above or properly cooled at 4.0C or below. When cooked protein is left in the danger zone too long (between 4.0C to 60.0C) this may lead to serious foodborne illnesses for the consumers.
Turn on the oven higher if you wish to keep food warm in the oven after cooking and maintain the internal temperature of these food to 60.0C or higher - use a thermometer to check.

Follow-up conducted for report# KLAI-CZRTM8
Broken cooler by the back door has now been replaced with another functioning chest freezer - temperature noted satisfactory.
Walk-in station by the freezer now noted with paper towel is the dispenser.
Proper storage hierarchy observed in the walk-in cooler.
Light shield replaced in the dry storage room.
Mouse droppings noted during last routine inspection has been cleaned. No droppings noted during this inspection.
Magnetic knife holder and cooler unit cited previously as insanitary have now been cleaned and noted in a sanitary condition.

Note: Screen door was replaced however a small hole (fits the size of a pencil) noted on this new screen door. Please repair to prevent pest entry.
