Routine check:
Hand washing station has liquid soap and paper towels.
No hot holding - soup being cooled in small volume. Reviewed food grade /microwave safe container requirements.
Prep cooler and commercial cooler both at 4 C or colder.
Domestic frigidaire air temperature is 7 C however food temperature is ok. Monitor temperature using your thermometer. 4 C / 40 F or colder required.
New commercial dishwasher 180 F + at the gauge - good. Temperature inside of the dishwasher is 71 C/ 160 F + - good.
Sanitizer (chlorine) used for wiping cloths.
Some surfaces (counter near dishwasher, ceiling above food preparation area) are difficult to clean. Any future renovations to include improving surfaces in the kitchen so they are non-absorbent and easy to clean. Renovations require FHA approval.
