Observation (CORRECTED DURING INSPECTION): 2 large pails of soup broth made at least the previous night were probed at 13C and 11C. Operator has 2 ice wands on-site and did not use ice wants to cool broth.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. Use ice wants to rapidly cool hot potentially hazardous foods once the temperature reaches 60C. Both pails of broth were discarded at the time of inspection. Improper cooling of hot potentially hazardous foods may result in the issuance of violation tickets.

Comments

-Follow-up inspection to August 17, 2017.
-Bleach sanitizer pails were tested at 200ppm at the time of inspection.
-Raw foods were properly stored below ready-to-eat foods at the time of inspection.
-Fly tape hanging above food contact surfaces/food storage/equipment storage areas have been removed. 3 strips of fly tape located in the kitchen are not above food contact surfaces/food storage/equipment storage areas. Number of flies in the facility have decreased significantly.
-Did not observe any foods stored in opened cans at the time of inspection.
-Did not observe foods wrapped in newspapers at the time of inspection.
-Did not observe facility reusing produce shopping bags at the time of inspection.
-Back screen door has been extended to the top of the door space to prevent potential fly entry.
-General cleaning has been carried out in kitchen. Ensure facility is maintained in a clean and sanitary condition at all times.
-Prep cooler door seals have been replaced.
