Observation (CORRECTED DURING INSPECTION): Observation: Potentially hazardous foods stored in deli cooler at >4C (sandwich 11.0C, sausage buns 9.8C) since morning. No temperature logs in use. Potentially hazardous foods held above >4C can allow pathogens to grow and produce toxins (poisons) which can make customers sick
Corrective Action(s): Discard the 4 carrot cake slices, 15 sausage rolls, 1 sandwich and sliced salad. Operator has chosen to HOLD the items in the walk in cooler until garbage day (Friday) so that they do not smell and attract birds.
