Observation (CORRECTED DURING INSPECTION): Dishware is not cleaned and sanitized after use. Staff are rinsing reusable dishware in the front service area handsink with water alone.

Wiping rags in front area stored in approx 1000 ppm chlorine.

Wiping rags in back area stored in less than 50 ppm chlorine.
Corrective Action(s): All food equipment, food utensils and food contact surfaces must be cleaned of all debris, then sanitized after use.

All food equipment and utensils where possible are to be cleaned and sanitized after use, using the dishwasher equipment.

All wiping cloth rags in use are to be stored in a container of sanitizer solution (100 ppm chlorine, 1 tea spoon of bleach per 1 litre of water).

Staff prepared new sanitizer solutions throughout premise.

Staff sent all reusable dishware from front service area through the dishwasher to be cleaned and sanitized.

Observation: Mouse droppings on floor under dry storage shelving and in staff washroom along walls and around grease trap.

Dust and debris collecting on floor under ice machine and front 2 door undercounter cooler.

White mold observed developing on interior of ice machine.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
