Observation (CORRECTED DURING INSPECTION): Two door upright cooler is not working. Internal food product of various food items (egg yolk, egg white, tofu, cut vegetables in water, pork, beef, several trays of sausage, chinese sausage and different types of meat) ranged between 7 to 12C. Pictures were taken
Corrective Action(s): - All the food items were discarded.
- Call for service and do not store any food items in the cooler.
- Ensure that the cooler temperature is maintained less than 4C (internal food temperature)

Observation (CORRECTED DURING INSPECTION): Dishwasher was not working and was measured at less than 10ppm chlorine residual during final rinse cyle
Corrective Action(s): Dishwasher sanitizer was primed, after running several cycle, chlorine residual concentration was measured at 100ppm concentration
- Wash all dishes that have been washed and sanitized since Monday (restaurant opened again)
- Check the sanitizer concentration everyday and maintain log

Observation: - Cardboard boxes with food stored on floor inside walk-in freezer
- Bulk bins were left uncovered
- Bowl used as scoop in bulk storage bins
Corrective Action(s): - Store all food items off the floor. Cover all bulk bins.
- Use scoops with handles and store scoops in such a way that the handle does not come in contact with the food

Facility was closed for about two months and has opened for business again.

- All handsinks in the kitchen, front dim sum area and staff washroom are supplied with hot and cold running water, soap and paper towel
- Sanitizer solution in spray bottles at front and all buckets with cleaning cloth is measured at atleast 100ppm chlorine residual
- Walk in cooler, two prep coolers, dim sum coolers are measured at temperature less than 4C
- Walk in freezer and chest freezer are functional and are measured at -18C or less
- No pest activity was observed at the time of inspection
- FoodSafe certified staff is available on site
