Observation: Lots of fresh mouse droppings (10+) noted in the back room area - especially in the open cabinet.
Corrective Action(s): Sweep, clean and sanitize all areas noted with the mouse droppings. Monitor and continue to work with your pest control company.

Observation: An open display cooler was noted with an ambient temperature of 11.0C.
Corrective Action(s): As per staff, any cold potentially hazardous buns were just delivered this morning and just brought out. Time tracking will be completed for these buns. Do not use this cooler to store any items that require refrigeration, unless time tracked, until it is serviced and able to maintain at 4.0C or below.

Observation (CORRECTED DURING INSPECTION): Noted some buns containing potentially hazardous items (e.g. cream and pizza toppings) stored in an open display cooler that was noted with an ambient temperature of 11.0C.
Corrective Action(s): Staff places time tracker stickers on the buns during the inspection.
As per staff, they are aware of when they received and placed out the buns and know to discard the buns after 4 hours. However, no time marking was noted on these buns.
As per previous discussion and approved food safety plan, anything that is not under temperature control must have a clear time tracking sticker on the item and the item must be discarded after 4 hours if not sold. These items will also need to be tracked on a log sheet.
