Observation (CORRECTED DURING INSPECTION): Observation : 1) Waffle and French toast batters containing
raw egg stored in broken cooler, measured 4C using
probe thermometer. Operator stated the batter had been
made this morning (currently 11am) 2) Prepared greens
stored in cooler cabinet measured 8C using probe thermometer
Corrective Action(s): Corrections : 1) Batter and greens : moved to walk-in cooler.
Do not store potentially hazardous goods above
4C to prevent pathogen growth

Observation (CORRECTED DURING INSPECTION): Observation : No sanitizer was in use or prepared in Kitchen area
while food prep was already occurring. Wiping cloths were
left on counter when not in use

Corrective Action(s): Corrections : Sanitizer bucket was prepared and measured
approximately 200 ppm quats. Keep wiping cloths stored in
sanitiar when not in use and have sanitizer prepared at
all times for proper sanitization.

Observation: Observation: Built-in cooler next to grill top area is leaking
and needs repair. Air temperature measured 12C and food
stored inside measured 12C. Store manager was made aware
of broken cooler 2-3 days prior, however it has not been
addressed or fixed
