Observation: Heavy deposits of mice droppings observed throughout the premises. Particular issue noted in the following areas:
-behind the cook line and cook line equipment
-around the back of house hand sink (deep fry station)
-behind and around the back of house 2 door upright cooler
-in the lower shelves of the shelving units next to the walk-in freezer
-underneath the tables next to the walk-in cooler
-throughout the boiler room (inside stored shoes, behind cardboard, around the hot water tank)
-in the shelves next to the sushi bar area
-in the sushi bar cinder blocks
-on the lower shelves of the sushi bar back counter
-under the sushi bar
-under the mop sink in the back area
-behind the dishwasher area 4 door cooler unit
-on the lower shelves of the storage shelves in the dishwashing area
-on the lower shelves of the drink glasses
-in the modem and router storage area
-behind the drink fridge and ice machine
this is not an exhaustive list

1 live cockroach noted within modem and router storage area. removed by operator at the time of inspection
Corrective Action(s): Conduct a thorough deep clean of the facility. Remove items from the shelves and clean them thoroughly.
Remove equipment from walls and clean under them as well as behind them
Remove equipment and items not required for operation of the facility (ie: tennis racket)
Have a professional pest control service review the facility thoroughly to identify any areas of pest entry and remediation recommendations

=Rice hot holding measured 80C at the time of inspection
=High temperature dishwasher had a final rinse temperature of 75.0 C at the dish surface (minimum 71 C required for proper sanitizing)
=3 compartment sink with sink plugs available for manual dishwashing. Operator able to demonstrate manual warewashing method
=Staff hygiene satisfactory at the time of inspection; staff FOODSAFE certification verified to be within expiry date (operator good to 2026).
=Permit posted in a conspicuous location
