Observation: Mould build up on walls. This is a repeat violation.
Corrective Action(s): Operator stated they were on a deep cleaning schedule. Doors of walk-in cooler have recently been done and walls to be done soon.

Observation: Laminate peeling from work table. This is a repeat violation
Corrective Action(s): Repair or replace table. Food debris may get underneath laminate peeling and foster bacterial growth.

Observation: Cap to piping underneath handsink has broken off. Water is draining directly onto the floor.
Corrective Action(s): Find proper fitting cap. Must be repaired before food production begins tomorrow.

Comments

- No food production taking place at time of inspection
- Handwashing station stocked with soap, paper towels and hot and cold running water
- Sanitizer measured >200ppm chlorine in spray bottle (use 5mL unscented household bleach in 2.5L of water)
- Back cooler unit by bathroom not on at the time of inspection - usually only turned on in the winter
- Walk-in cooler measured 4C
- All freezers (2 in prep area, 6 in front area, and 2 in back area): -18C or colder
- Pest reports reviewed; activity noted on the exterior, nothing in the interior - continue to monitor and clean droppings when found
