- Retail storefront and warehouse for wholesale distribution.
- Only pre-packaged products. No re-packaging or direct food handling permitted as no handwashing station or warewashing present.
- General sanitation satisfactory. The majority of items are stored on pallets or shelving off of the floor. Some items to be put away at the time of the inspection.
- Sliding door cooler (retail section) 3C
- Freezers (warehouse section) -17C to -24C
- No signs of pest activity noted at the time of the inspection. Pest control contract in place with service every 2 months. Traps noted for monitoring.
- Receipts/invoices were provided since last inspection for frozen packaged chorizo and carnitas. Chorizo is made/supplied by Columbus Meats and Carnitas by Tapatio. (Products are labelled under Don Chendo)
