Corrective Action(s): - Cover pot of raw chicken. Store in a manner where plastic curtains will not contaminate food.
- Store opened bags of dried ingredients in food grade containers with tight-fitting rodent proof lids.

Comments

- Handsinks are accessible and supplied with liquid soap, papertowels, hot and cold water.
- Pizza Prep Cooler and Inserts: <4 deg C
- Walk-In Cooler: 3 deg C
- Freezer: 13 deg C *Ensure that unit maintains temperature at or below -18 deg C*
- Pizza on Display - Staff were able to demonstrate timer method. All pizzas had been entered in computer and timers set. Waste basket with discarded pizza present.
- Wiping Cloths stored in 200 ppm chlorine bleach solution. Sanitizer spray bottles available throughout kitchen.
- Cleaning and sanitizing procedures and frequency for Pizzamatic Slicer and Pizza Slicers reviewed with staff. Pizzamatic Slicer and Pizza Slicers are cleaned and sanitized every 3-4 hours.
- FOODSAFE requirements satisfied at time of inspection.
