302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: The mechanical dishwasher final rinse sanitizer residual measures zero ppm Cl. The sanitizer residual must measure at least 50 ppm Cl as measured by sanitizer test papers. The dishwasher does not have a 'prime' button/switch to 'pre-load' the wash and rinse cycle. Air enters the sanitizer feed line when the 'pick-up' wand is removed from the empty container and placed into the new sanitizer container. A 'prime' switch allows the operator to refill the sanitizer feed line with fresh sanitizer when the machine is put back into use.
Corrective Action(s): A 'prime' switch should be installed on the sanitizer feed cycle so that all dishwashing finishes with a sanitizer in the rinse cycle.

Generally well maintained. Sanitation is good. Refrigeration measures < 4 C, with the above noted exceptions. Freezer temperatures measure < -18 C.
