Observation (CORRECTED DURING INSPECTION): 1) Observation: Raw chicken found on floor being placed back into fresh chicken container.
Correction: Foods that have fallen on the floor are not suitable for consumption due to possibility of contamination. Food was thrown out.
2) Observation: Raw meat in freezer uncovered and in contact with other food items.
Correction: Food was thrown out. Uncovered foods may be contaminated and are not fit for consumption.

Observation (CORRECTED DURING INSPECTION): Observation: Right cooler under prep cooler noted at 9 deg. C. Seal under cooler door not in good working order.

Observation (CORRECTED DURING INSPECTION): Observation: Meat slicer was found in an unsanitary condition with food debris stuck on.
Correction: Meat slicer is to be taken apart after use for proper cleaning and sanitizing. The larger portion of the slicer must be cleaned and sanitized in place.

Correction: Flour is to be transferred into a container with a closable lid to prevent the harborage of pests.

Comments:

-Freezers were -18 deg. C or below
-Dishwasher was 74.2 deg. C at the plate (71 deg. C minimum)
-Premise was free of pests at the time off inspection.
-Permit was posted in a prominent location.
-Ensure temperature logs are kept for coolers and freezers.
