Observation (CORRECTED DURING INSPECTION): Scoops were stored inside ingredient containers.
Corrective Action(s): Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods. Scoops were relocated at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -15C.
-Both prep coolers were at 4C (top and bottom).
-Bar area cooler was at 4C.
-Upright freezer was at -18C.
-Hot holding was greater than 60C.
-Pork was cooked to greater than 71C.
-Pho broth cooled with the addition of ice and water. Broth made this morning was in the walk-in cooler at 4C.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface (minimum of 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottle and pails were at 200ppm.
-Foods stored off the ground. Raw meats were stored below ready-to eat foods.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until December 1, 2022.
