Observation (CORRECTED DURING INSPECTION): Cooked rice at the hot holding unit measured with an internal temperature of 55C. Staff stated it was made less than 2 hours.
Corrective Action(s): Reheat the rice to 74C and increase the hot holding unit temperature. Hot food must be hot held at 60C or above at all times.

Observation: Tomato leftover observed in the cervices of the vegetable cutter.
Corrective Action(s): Clean and sanitize the vegetalbe cutter. Ensure any food eqiupment is cleaned and sanitized properly after each use.
