Followup inspection to Rpt # VCHN - BLFRQP:

Update food safety plan received for the cured duck meat. Nitrite concentration does not exceed 200ppm. End product is also not meant to be shelf stable and still requires a cooking step prior to service. Revision to food safety plan required for the final cook step of 74 degrees C for 15 seconds. HOLD stickers removed.

Raw shell eggs stored on lower shelf away from vegetables and other ready to eat foods.
Dust accumulations cleaned on the ceiling tiles around the ventilation units.
Temperature monitoring records maintained and available for review.
