Observation: Thermometers could not be located in back sliding glass door coolers or walk in cooler.

Routine inspection:
*one sink in front bar area has been converted back to a handsink, as per approved plans - ensure this sink always has liquid soap and paper towel here for bartenders/servers to wash their hands
*front spray bottle that kitchen manager thought contained quats, did not, ensure that all staff know what is in each chemical bottle

-chef recently re-took food safety course, certificate shown at time of inspection
-handsink fully equipped in kitchen
-frozen fish thawing in container on bottom shelf of cooler
-coolers at 4C or less
-freezers at -18C or less
-dishwasher sanitizing at 100ppm chlorine
-bleach spray bottle and bleach water bucket both at 200ppm chlorine
-ice machine clean, ensure ice machine scoop is always stored outside of the machine and in a clean container
-fans in kitchen are clean
